I am just about up to the top of my head with sickies in my house. Poor Kale has had it the worst. He is the only one who had a really high fever and throwing up. I am really hoping this is the end of it. Poor little family.
Needless to say I did not work hard for a pic today. I placed my vase in the window and snapped a shot. It actually came out quite nice. Well, the baby is crying and Kiara is ready to get out of her bath. Till next time…

Another last minute shot today.  Both of my beautiful girls are sick today and I didn’t sleep last night.  Thankfully they both fell asleep at the same time for naps and I got a little sleep.  My poor house is a disaster.  I am not sure I will ever get caught up.  I am sure one day my house will be as neat and pretty as Martha Stewart.  ummm, not.   😀

Today was one of those days. You know, the kind where you just want to scream, cry, and stomp your feet in a toddler like tantrum. Did I? No, This time I refrained from the tantrum but took time instead to calm myself while watching the silence that is my back yard. I needed that. You see, my baby girl is sick today. So we decided to keep my son from school(he has asthma).  He and his sister (my middle child) were at each others throats all morning. Drove me crazy!!! I am so grateful that God gave me a sweet baby to care for. She cries sometimes but mostly she is just quiet and snugly. This is the moment I found my peace and centered myself. Can you feel the quiet in the prayer I whispered to the heavens?

{braeburn apples}

I officially have a huge love for these apples. They are crisp like a granny smith but as sweet as a golden delicious. You really. Cannot find a better apple. Actually, I would challenge you to find me a better one. I love apples more than any other fruit so any time I find the perfect one it is heaven.
I love the color and the stripes on these. They just look amazing.

{apple pie}

I have been meaning to do the post since last weekend. For some reason I have been in a bit of a slump. My writing, photos and (of course) my house cleaning have all been a big fail. Here’s hoping that things will get better the next few days.  I even had photos of the step by step crust making but they were not up to par so I will do that another day.
Anywho….on to the apple pie. The crust is Martha Stewart’s recipe. I figured that I should not mess with a good thing and just went with a fave. You can find that HERE.
The filling is all my own. This is as simple and delicious as it gets.

{Apple Pie}
6 apples cored and sliced
1/2-3/4 C sugar
1 T cinnamon
1 t cloves
1 t nutmeg
1/2 t salt
1 T butter sliced to small slivers.

Mix all ingredients except butter in a large bowl. Pour into cooled pie crust. Top with butter slivers. Using a pastry brush lightly brush a small amount of water or egg white along the edges of the crust. Add second crust and pinch to seal. Bake in a 400 degree oven for 30 minutes. Reduce heat to 350 (covering edges of the crust with foil) and bake for an additional 20 minutes.

{lose} my word for 2011

My word for 2011 is lose.  I think it may seem a bit odd but here is why I chose this word.

I want to lose the last 20 some pounds since having my last child.  Really I am not in any HUGE hurry since she is only 4 months and I am still sitting at around 150.  Not bad but I can still feel the weight “weighing” me down some days.  (catch all the puns in there.  lol)  I am so tired all the time and I am easily out of breath.  It makes it very hard for me to follow my own children around much less other children I am hoping to photograph this year.

I am just dying to lose the clutter and excess junk in my home.  It is full of stuff I don’t use, need or even want any more.  I have boxes of stuff sitting in my closets and shed that I am sure I don’t even remember buying.

Most important of all is losing my fear.  Fear of people that is.  I am on a good start with that already by becoming more active in my MOPS group and bowling every Wednesday night.

homemade “candy bars”

Today was very uneventful. Umm…not. I forgot to send Kale his lunch and realized this thirty minutes before his lunch hour. Oops! So I rushed off to Burger King since we were already out of the house. I got there as his line was going in to the lunch room. Whew!!! I am officially NOT the worst mom in the world. For today anyway.

This evening one of his friends came over to play Mario Kart for a bit and I made candy bars. Actually they are more like candy bites. They are so simple, too! I thank Giada of Food Network for the idea. I did not actually look up and use her recipe but I am pretty sure this is how she did it.

Kiara was begging for caramel bits from the bag while I was assembling.
{Candy Bites}
1 bag of caramel bits
1 bag milk chocolate chips
1 bag almond slivers

Spray 24 cupcake “holes” with butter flavored spray.
(Toast almonds before assembling if you want. I was too impatient and just used them out of the bag.) 😀
Place a small handful of almonds in the bottom of each cupcake “hole”.
Top the almonds with a small handful of caramels. Make sure to cover the almonds.
Place in preheated oven for 15 minutes. Do not overcook!! The sides will get crunchy.

You want to have chewy centers not crunchy.

Allow to cool completely!!
Melt the bag of chocolate in a glass bowl in the microwave for 2 minutes.

Stop and stir every 30 seconds.

Dip cooled caramel almond bits in chocolate and allow to cool.

{Why do I try?}

As I stand in my kitchen with it’s mound of dishes, dirty laundry and the worlds cutest screaming baby, I ask myself, Why? Why do I try? They never like what I cook. It is a HUGE fight at the table every night. I have to send one or the other of the kids to their rooms and (ahem) a lot of yelling. Now, it isn’t the veggies I have an issue with. It is the meat and “potatoes” part that they don’t like. If I served fish, fries and a veggie every night, they would scarf if all up.
So, halfway through the cooking process my hubs comes in and grabs the baby because he just can’t take it anymore. He smiles at me and I remember what it is all about.  I suffer through every night of cooking, fighting and clean up because I love them. I make nutritious food as often as I can so I know that I am doing my part to build healthy habits for their futures. I really hope they appreciate it in the long run. For now I just muddle through and look forward to the days when I have time to fire the oven up and bake something sinful.

Clickin Moms {my new joy}

I finally bought a membership to Clickin Moms.  I didn’t realize that there were memberships for those of us with diapers to buy.  lol  I bought a one month membership to test it out.  I am barely even into the first thread and really wish I could stay for life.  There is just so much info to process!  Reading some of the tips and tricks makes me even more excited to pull out my camera.  I know I have so much to learn and for at least the next month I will be soaking it all in!  Check it out for yourself.  Click the box below to see what Clickin Moms is all about.

{orange scented whipped cream}

One of my new favorite things is homemade whipped cream.

I put it on my (dry) pear apple tart, in my coffee, on strawberries… You get the picture. Lol

The best part is…it is soooo simple to make.

{Whipped Cream}
1 pint heavy whipping cream
1/4 cup granulated sugar

Put ingredients in a large metal bowl and beat till thick. For thicker consistency use powdered sugar.

To make the orange scented cream, I put orange zest in before beating. I would not use orange juice as it may cause the cream to curdle. I made that mistake with pomegranate juice. Uck. That was not good. Lol

{Another major fail…}

Yup, that’s me. Admitting another fail.  Wanna know what I failed at?  Ok, I’ll tell.  Just don’t laugh please.  Pretty please?



Fried Chicken.  I failed at making fried chicken.  Again.  See it is not that I failed, it is that I failed twice.  I bought drumsticks.  Made the bread crumbs and the buttermilk.  Got the drumsticks out of the bag and realized that they were the size of turkey drumsticks.  Any other time I would have bought them, they would have been tiny little meatless drumsticks, but today they were huge!!!!  I mean HUGE!!!!  I really should have started dinner earlier or maybe oven fried the buggers.  It took me one hour to cook those stupid things.  They tasted absolutely awful.  No flavor and the crumbs were burnt.  I was so sad.  I have used my once weekly chance to cook the only meat I like (next to fish) and I screwed it up.  I think pan fried chicken is going on the list of things I will never ever cook again.  I mean EVER.  Yuck!  lol

On  a good note.  I made donuts this morning and those were awesome.  Except I used all the powdered sugar to make cupcake icing.  haha  I guess that makes two fails in one day.  Some day, huh.  I guess I should have gone to church after all.
