{pink velvet cupcake}


My sweet daughter actually challenged me to make these.  She asked for pink cupcakes for her birthday.  I decided to make pink velvet cupcakes instead of the traditional red velvet.  They are topped with a cream cheese frosting of my own design.

I modified the cake recipe from this one HERE.

Instead of red food coloring I used pink gel.  Only use about 1/4 of the average size paste/gel bottle.

I don’t know about you but I don’t like a CC frosting that is too cream cheese-y. (is that even a word? I doubt it lol)  I want it to taste like frosting not cheese cake.

In order to accommodate my taste I came up with this recipe.

Cream Cheese Butter Cream

1/2 block cream cheese (room temp)
1 stick butter (softened)
1 t vanilla
3 C confectioners sugar

cream butter, cream cheese and vanilla till smooth. Add confectioners sugar 1 cup at a time, beating each till combined. Continue to beat till it gets to the perfect piping consistency. If you use food coloring (my favorite is gel) add it with the vanilla to avoid a brightly colored mess or over beaten frosting. 🙂
I also added the white sprinkles immediately after with the help of Kiara who insisted that they be done just so. 🙂

We shared these with our playground friends today and I am thinking of filling the remainder of them with strawberry jam to take to MOPS on Thursday.

Pomegranate Syrup

Take two on the quest for the best syrup.  I think this one is amazing! 

 I used a beautiful pom wonderful bottle to make this but I am sure if you are ambitious enough you could make the syrup from fresh pomegranates. 


Pomegranate syrup

1 cup of pom wonderful

1/2 cup of water

1/2 C Sugar

1/2 C corn Syrup

Stir together in a medium pot and bring to a boil.  Cook, stirring occasionally till the liquid reaches 210 degrees.  Reduce heat and simmer for about 15 minutes or until thickened.  Turn off heat and allow to cool a little before pouring into a glass container.  Make sure your container is at room temperature or it will crack.  🙂

{first big fail}

Well, yesterday I had my very first HUGE fail. I decided to make a beautiful peanut butter and jelly cupcake. Instead of jelly I decided to make a lovely pomegranate filling. So I started out by making a soft and delicate vanilla cupcake. Then I piped in a gorgeous pomegranate mousse. On top was a perfect peanut butter buttercream. Sounds good, right? Then I took my first bite. It was bland. When I say bland, I mean, tasteless. As I was making the individual parts they tasted perfect but as a complete cupcake the parts lost a little something. I have not given up on the best peanut butter and jelly cupcake but for now I am giving my sweet tooth a break. Tomorrow I will be posting pictures and a recipe for my spinach and artichoke bread bowl. Sound weird? Ooo You just don’t know!

{pancake heaven}

I have to start this post with an explanation. I am awful with remembering to buy silly things like syrup for pancakes. I don’t care how many times I put it on the list or add a reminder in my phone, I always get home, slap my forehead and say, “DOH.” Yup, every single time. Truth be told, I don’t really like pancake syrup anyway. So…
I have found a great alternative to ultra sweet sticky syrup! Fruit!! Cooked down and served warm. Here is the first of many that I like. I am sharing this one first because it may apply to now.
I was looking around this morning to find something I could make my “syrup” out of and ran across my half a can of pumpkin pie filling and the half a jar of molasses I had left over from a batch of pumpkin bread I made for my neighbors. I used a pancake recipe from Hannah of honeyandjam.com and modified it a bit. This is the beautiful tasty result.

Pumpkin Sauce
1 C pumpkin pie filling
1/2 C molasses
1/2 C light corn syrup
1 t cinnamon
1 t nutmeg
1 t cloves
Combine all ingredients in medium saucepan and bring to a boil. Reduce heat and simmer till warmed through. For more syrup like consistency simmer longer.
It tastes a little like pumpkin bread straight from the oven. My son who is as picky as they get, ooo’d and ahhhh’d over this. I will definitely be making this again.

{comfort food}

I am so excited to be sharing my first food post with you! Last night it was so late by the time I got to eat that I decided to make one of my favorite “light” comfort foods. Just the smell of this warming on the stove makes me smile and my mouth water. The tartness of the tomatoes and the smokiness of the mozzarella blend so well together that you really only need a little of each to make a great tasting dish.
Adding a small amount of butter and a shake or two of garlic salt with herbs just bring it all together. On top of the wonderful aroma and mouth watering flavor is the beautiful visual appeal. It screams for you to eat it all up. 🙂

Savory Pasta {light version}

2 C pasta cooked to your liking
1/2 can diced tomatoes with juice
2 T butter
1/2 C Parmesan Cheese

I hope you all had a fantastic Christmas!  I had a wonderful holiday weekend.  My parents and my father-in-law were here for the whole thing.  It was really nice to have family around us for the holidays.  I took a ton of pictures that I have not even had time to look at yet.  I cannot wait to share some of them with you.

I also have some news for you.  I am planning on turning this blog into more than just my photos.  I have rediscovered my love of food this holiday season.  My idea for this year is to post photos of my food creations as well as the recipes.

Also, in the process of posting my project 365 photos I have collected several that I think might sell so I will be adding an ad for Cafe press prints on the side.  Your purchase of my prints will help me keep this blog and my contests alive.

the color red….

It has been a long time since the last photo contest! I have been so very busy trying to keep up with my sweet new baby and chasing my other two munchkins. It has been quite a ride learning to adjust to three children.

So, with the holidays quickly on us I thought I would ask you all to take a photo of something red. It does not have to be Christmas related. How you interpret the theme is up to you.

I do have a prize for this one, too. I will randomly choose one person to win a prize pack of all 3 sets of my actions. Two of these packs have not even been released, yet.
